(P.S- One can alter the quantity as per their requirement)
Preparation Steps
- Set a cooking pot on medium heat and add 1.5 tablespoons of oil.
- Once the oil heats up, add Hing and cumin seeds (one can add Khada masala too like bay leaf, cloves or cardamoms)
- Wait for the cumin seeds to crackle a bit and then add the chopped onions. Add a little salt to onions to help them cook fast by releasing the moisture out.
- Add ginger-garlic paste next and cook the masala till the onions turn light brown (this may take 5-6 mins)
- While the Onion masala is cooking, take a sharp knife and carefully cut the boiled kernels off the cobs and set aside
- Now add the spices- turmeric, red chili and coriander powders to the onion masala mix.
- Mix the chopped tomatoes to the masala and cook for another 5 mins.
- Once the masala is cooked, one can see the oil droplets on the edges of masala
- Add the salt, corn kernels and little water and bring it to a boil (you can add more water to adjust desired consistency) Lower the heat to medium-low, cover the lid and cook for 10 mins
- After 10 mins, add fresh cream, garam masala, and Kasoori methi and give it a good mix.
- Turn the heat off. Sprinkle the chopped coriander and serve hot with rice/naan/chapati
