Creamy Sweet Corn Recipe Tanu Mohit Choudhary

Sweet Corn is one the most liked vegetable by everyone, including our kids, be it grilled, boiled, or microwaved. Apart from being a great source of carbs, Corn has a lot of water along with an impressive amount of protein and fiber. Other than corn chaat or corn soup, why not use this yummy healthy vegetable as the main dish in our meals. Enjoy this creamy sweet corn curry with rice/ chapati/ Naan. I am pretty much sure that everyone in the family will love it. 

Ingredients for Creamy Sweet Corn

  • 1 to 1.5 corn husks (peel the silk and boil the corn cobs in 2 whistles) OR Frozen corn kernels can also be used
  • 1.5 tablespoon of Oil
  • 1 teaspoon of Cumin seeds (Jeera)
  • Pinch of Hing
  • 1 medium-size onion- finely cut
  • 1 teaspoon garlic and ginger paste (or finely chopped ginger and garlic)
  • ¼ teaspoon turmeric powder
  • ¼ chili powder
  • 1 tablespoon coriander powder
  • Fresh Cream (2-3 tablespoon) OR one can also take Soaked cashews paste
  • 1 cup of water
  • Salt to taste
  • ½ teaspoon garam masala
  • 1 teaspoon of Kasoori Methi
  • Cilantro to Garnish

(P.S- One can alter the quantity as per their requirement)

Preparation Steps

  1. Set a cooking pot on medium heat and add 1.5 tablespoons of oil.
  2. Once the oil heats up, add Hing and cumin seeds (one can add Khada masala too like bay leaf, cloves or cardamoms)
  3. Wait for the cumin seeds to crackle a bit and then add the chopped onions. Add a little salt to onions to help them cook fast by releasing the moisture out.
  4. Add ginger-garlic paste next and cook the masala till the onions turn light brown (this may take 5-6 mins)
  5. While the Onion masala is cooking, take a sharp knife and carefully cut the boiled kernels off the cobs and set aside
  6. Now add the spices- turmeric, red chili and coriander powders to the onion masala mix.
  7. Mix the chopped tomatoes to the masala and cook for another 5 mins.
  8. Once the masala is cooked, one can see the oil droplets on the edges of masala
  9. Add the salt, corn kernels and little water and bring it to a boil (you can add more water to adjust desired consistency) Lower the heat to medium-low, cover the lid and cook for 10 mins
  10. After 10 mins, add fresh cream, garam masala, and Kasoori methi and give it a good mix.
  11. Turn the heat off. Sprinkle the chopped coriander and serve hot with rice/naan/chapati
